Three Boozy Ice Lollies To Treat Yourself This Summer!

 
As it seems like we’re finally getting that summer weather we were promised and no signs of the heatwave slowing down just yet, Harrogate-based Slingsby Gin wanted to share some delicious boozy ice lolly recipes.

Perfect for cooling off on a long summer weekend or for adding to your spread for National Picnic Month this July, who says ice lollies are just for kids?

Slingsby Rhubarb Gin Ice Lollies

1 part Slingsby Rhubarb Gin
4 parts Fentimans Rose Lemonade
1 tbsp agave syrup
Fresh raspberries

Method:

In a jug, mix Slingsby Rhubarb Gin with Fentimans Rose Lemonade and squeeze into the mixture 1 tbsp of agave syrup.
Add two fresh raspberries into each ice lolly mould and divide the mixture between each.
Freeze for 1-2 hours until semi-frozen and then push the sticks into place.
Leave in the freezer until fully set and enjoy.

Top tip: As tempting as it is, please don't be too heavy with the gin as your lollies won't set!

Slingsby Marmalade Gin Ice Lollies

1 part Slingsby Marmalade Gin
2 parts orange juice
2 parts Mediterranean tonic or soda

Method:

In a jug, mix Slingsby Marmalade Gin, orange juice and Mediterranean tonic (or soda) and divide into your ice lolly moulds.
Freeze for 1-2 hours until semi-frozen and then push the sticks into place.
Leave in the freezer until fully set and enjoy!

Slingsby Gooseberry Gin Ice Lollies

1 part Slingsby Gooseberry Gin
4 parts cloudy lemonade

Method:

In a jug, mix Slingsby Gooseberry Gin with cloudy lemonade and divide into your ice lolly moulds.
Freeze for 1-2 hours until semi-frozen and then push the sticks into place.
Leave in the freezer until fully set and enjoy!
