Top Ten Summer Cocktails: No 6 Tom Collins

The recent sunshine prompted us all to enjoy some cocktails. People escaped once more into their gardens for BBQ’s, bars opening up, and generally some sense of ‘normal’ returning, Joseph Miller, top Mixologist at Blackfriars in Newcastle, and voted second best in the world by Brockmans Gin, will reveal his Top 10 cocktails for this summer over the next 10 weeks, exclusively for the Great Northern Food and Drink Festival.

“These are the top most popular cocktails which we will be serving for the summer, as well as an extensive menu, but these epitomise summer in a glass,” explains Joseph.

6. TOM COLLINS

This is another timeless classic which is very easy to make, drink, and also to create your own twist. It can be made in a tall glass, but I like to shake the initial mixture with ice.

50ml London Dry Gin
Lemon juice
Sugar syrup
Ice cubes

Shake the above ingredients together, pour into a glass and top with soda to lengthen the drink. Garnish with a lemon wedge. If you’d like to put your own twist on this, you could add a flavoured gin such as rhubarb, or a flavoured soda.

The Great Northern Food & Drink Festival takes place at Scampston Hall near Malton, North Yorkshire on 28th, 29th and 30th August.

There will be over 200 vendors and 20,000 visitors expected during the course of the three days.
